Liver and Onions

  • 500g calves liver
  • 3 onions
  • 1 tbsp flour
  • 500ml beef stock
  • Salt and pepper to taste
  1. Cut the liver into pieces about the same size
  2. Wash the liver under cold water and then pat it dry with a paper towel
  3. Peel and finely slice all the onions and set to one side
  4. Pour into a large plastic bag the flour and salt and pepper to taste
  5. Tie the top of the bag tightly and then shake the bag well to mix all of the ingredients together
  6. Add to the bag the liver and shake the bag well again to coat every piece on both sides
  7. In a large frying pan sauté off the onions and then set to one side in an oven proof dish
  8. Put the liver into the warmed pan and fry for about 2 minutes on each side then put the liver in the dish with the onions
  9. Pour the beef stock over the liver and the onions and hen cook in an oven at 200º for 30 minutes
  10. Open the oven and stir the liver then reduce the heat to 150º and cook for another 10 minutes
  11. Remove the liver and onions from the oven and serve while hot
