Breakfast Muffins


Today I will be sharing a quick and easy recipe for a Slimming World friendly snack. These are often referred to as Breakfast muffins but they are simply individual Slimming World quiche. They make a fab breakfast on the go or you could eat them with beans to make a a more filling lunch.

Ingredients


  • 4 large eggs
  • 200g Quark
  • 1 half pepper of your choice
  • 1 half onion
  • 3 rashers of bacon all fat removed and chopped in to small pieces

Method

To make the breakfast muffins firstly I spray some frylight in to a frying pan and then I fry the bacon, onions and pepper together until they are all soft.

Next whisk the eggs and Quark together and then I find it easier add the bacon, pepper and onion to the eggs and then pour the mixture in to your muffin cases. I made the mistake of using paper cases and the muffins were completely stuck to the paper so I shall definitely be getting myself some silicone cases as they will be non stick.

Just pop the muffins in to the oven at gas mark 4 or 180 degrees for around 20 minutes and et voilá a super simple guilt free snack and completely syn free.

  2. As many as you like. They're syn free. Add whatever veg you like to them. If you have 1/3 of your plate as speed, you've the perfect brekkie!
