Cheese and Cauliflower Pasta

Serves 2

Total Time: 30 min
A cheap meal that's full of lovely cauliflower and will fill you up all day
  1. Half a large cauliflower
  2. 1 red onion
  3. 80g wholemeal pasta
  4. 80g reduced fat cheese
  5. 1 garlic clove
  6. 1 large sprig of rosemary
  1. Cook the pasta according to the packet instructions. Meanwhile, cook the cauliflower until soft
  2. Whilst the pasta and cauliflower are cooking, slice the onion and cook over a medium heat for five minutes. Add the crushed garlic and the chopped rosemary leaves
  3. Drain the cauliflower and put it back in the empty pan, along with the onions. Mash the cauliflower roughly with the back of the spoon, stirring to coat with the onions and spices
  4. Drain the pasta, reserving a ladle of the water. Add the pasta, cheese and a lot of salt and pepper to the cauliflower along with the ladle of the water. Stir well to make a sauce and serve
