Slimming World Lunch Ideas and Recipes

Speedy Tomato Soup:

  • Low Cal Spray
  • 1 Red Onion
  • 1 Carrot Peeled
  • 1 Celery Stick Chopped
  • 3 tins x 400g Peeled Plum Tomatoes
  • 2 table spoons of tomato puree
  • 1 table spoon of sweetener
  • 600ml of vegetable stock
  • Salt and Fresh Pepper
  • Fresh Basil
  • Chilli Powder
  • Garlic
Sweat the onions, celery, carrot for 5 minutes
Add everything else and cook for 15 minutes
Then let to cool and use a hand blender to blend it all together

Italian Tuna, Peppadew and Basil:

  • 3 x Cans of tuna in spring water
  • 16 Peppadew Peppers drained and chopped
  • 600g Passata with onions and garlic
  • 8 gherkins chopped
  • 4 table spoons of capers, chopped and drained
  • Large hand full of fresh basil

Really easy, mix all the ingredients together and then it is done!
